One of my go-to easy meals are these delicious taco bowls. These are great to have during busy weeks or when you just don’t know what to make. They don’t take much effort but are packed with protein and flavor. Pick your protein and then go wild with your favorite toppings. This is also a sneaky way to empty the fridge and use up any ingredients that are headed out the door. I love using shredded lettuce or greens as my base for a lower calorie, higher volume bowl. Topped with protein, a sprinkle of cheese, avocado, beans and fire sauce. Kids love them too! My son loves to pick their own toppings, mostly cheese, but will always add a tortilla on the side. My daughter however would rather smash the black beans and fling the rice and meat.
