One of my favorite meals to make that looks like it took forever, enchiladas. I love a pan of bubbling, cheesy enchiladas fresh out of the oven that instantly feels like home. The smell of spiced beef mingled with warm tortillas and rich, red enchilada sauce is enough to bring everyone to the table before you even call them. This ground beef enchilada recipe is one of those no-fuss, big-reward dinners, perfect for a busy weeknight but still impressive enough to serve for a weekend family gathering.
What I love about this recipe is its balance of simplicity and flavor. We’re talking juicy ground beef seasoned with onion and simmered in enchilada sauce, wrapped snugly in soft tortillas, and topped with a generous layer of melty cheese. Once baked, they get that perfect golden-brown top with just a touch of crispy edges. And because this dish is so versatile, you can easily add your own twist, extra veggies, a mix of cheeses, or even a little heat with diced green chiles or jalapeños.
Whether it’s a quick weeknight dinner or a cozy Sunday meal, these ground beef enchiladas deliver the kind of rich, satisfying flavor that keeps everyone coming back for seconds. Serve them with a simple side salad, Spanish rice, or refried beans, and you’ve got a meal that’s sure to make it into your regular rotation.

Instructions
- Preheat the Oven
- Set your oven to 375°F (190°C) so it’s ready when you are.
- Prepare the Filling
- In a large skillet over medium heat, cook the ground beef and diced onion together until the beef is fully browned and the onion is soft, about 6–8 minutes.
- Drain any excess grease.
- Stir in the 10 oz of enchilada sauce and the ½ cup shredded cheddar cheese. Mix until the cheese melts and everything is well combined. Remove from heat.

- Top with Sauce and Cheese
- Pour the remaining enchilada sauce evenly over the rolled tortillas.
- Sprinkle a heavy hand of shredded cheese over the top so it’s fully covered.
- Bake to Perfection
- Place the baking dish in the preheated oven and bake for 20–25 minutes, or until the cheese is melted, bubbly, and just starting to brown at the edges.
- Serve and Enjoy
- Remove from the oven and let cool for a few minutes before serving.
- Top with sour cream, fresh cilantro, and sliced avocado for the perfect finishing touch.
Tips & Variations
- Cheese Options – While cheddar works beautifully, a Mexican blend, Pepper Jack, or Monterey Jack can add extra flavor.
- Extra Flavor Boost – Add a pinch of cumin, chili powder, or smoked paprika to the beef while it’s cooking.
- Vegetable Add-Ins – Bell peppers, black beans, or corn can be mixed into the filling for more texture and color.
- Freezer-Friendly – Assemble the enchiladas without baking, wrap tightly in foil, and freeze for up to 2 months. Bake straight from frozen, adding an extra 10–15 minutes to the cook time.
