
If you haven’t guessed already, my love language is food. Specifically, cooking for other people. One of the first things I really worked at perfecting was banana bread. We know her. We love her. She’s a tried and true, fan favorite. It’s taken me many years and various ingredient combinations but think I’ve finally nailed it. I make this recipe as gifts for friends and family. I make it just to have for my house. Sometimes I buy bananas with good intentions, then let them turn, just to make banana bread. My point is, I love banana bread and I think this is the perfect first recipe to share with you guys. Hope you love it!
Ingredients
- 1.5 cups APF (All Purpose Flour)
- 1 tsp baking powder
- 1/2 tsp salt
- 1 tsp cinnamon
- 1/2 cup butter (1 stick, semi melted in the microwave
- 1/2 cup brown sugar
- 1/4 cup white sugar
- 2 large brown eggs
- 1/3 plain Greek yogurt
- 3 ripe bananas, mashed
- 3/4 cup mini choc chips (optional, but not really)
Instructions
1. Preheat oven to 350°F (175°C). Grease a 9×5-inch loaf pan or line with parchment paper.
2. Mix dry ingredients: In a medium bowl, whisk together the flour, baking powder, salt, and cinnamon.
3. Cream butter and sugars: In a large bowl, beat the softened butter, brown sugar, and white sugar until light and fluffy (about 2-3 minutes).
4. Add eggs and yogurt: Beat in the eggs one at a time, then mix in the Greek yogurt until well combined.
5. Add mashed bananas: Stir in the mashed bananas until the mixture is smooth and uniform.
6. Combine wet and dry: Add the dry ingredients to the wet ingredients and mix until just combined—do not overmix.
7. Fold in chocolate chips: Gently stir in the mini chocolate chips.
8. Bake: Pour the batter into the prepared loaf pan and smooth the top. Bake for 55–65 minutes, or until a toothpick inserted in the center comes out clean or with a few moist crumbs.
9. Cool: Let the bread cool in the pan for 10–15 minutes, then transfer to a wire rack to cool completely.
